5 Quick And Easy Granola Recipes With Dry Fruits And Nuts

A popular breakfast item, granola can be eaten with yogurt, milk, or even by itself. High on fibre, it is also very easy to make. Here are some quick granola recipes to get you started

Honey Almond Granola

Mix together 4 cups of oats, 1 ½ cups of slivered almonds, ¾ teaspoon salt and ¼ teaspoon cinnamon. To this, add ½ cup each of coconut oil and honey (you can substitute honey with maple syrup as well). Lay the mixture flat on a tray and bake it for 22 to 24 minutes at 175o Celsius. Once cooled, add chopped dried apricots and raisins.

Orange Cranberry Granola

Rub together orange zest and 2 tablespoons of sugar, till the sugar turns orange. Mix this with 4 cups of oats, 1 ½ cups chopped walnuts, ¾ teaspoon salt and 1 ½ teaspoon of cinnamon. Add in ½ cup of coconut oil and maple syrup. Press the mixture onto a tray and bake at 175o Celsius, for around 22 to 24 minutes. When it is cool, add dried cranberries.

Ginger Coconut Granola

To 4 cups of oats, add 1 ½ cups of chopped walnuts, ¾ teaspoon salt, ½ teaspoon cinnamon and ½ teaspoon ground ginger. Mix together 1/3 cup maple syrup, ¼ cup molasses ad ¾ teaspoon vanilla. Add this to the dry ingredients. Layer it on a baking tray and bake for 20 minutes at 175o Celsius, add coconut flakes, mix, and bake for another 10 minutes. Once cool, you can add cranberries and candied ginger.

Cranberry Pumpkin Granola

Combine 3 cups of oats with 1 cup dried cranberries, ½ cup coconut flakes and ½ cup pumpkin seeds. Add ½ cup maple syrup, 1 ½ cup brown sugar, ½ teaspoon salt and ¼ cup coconut oil. Spread the mixture evenly on a tray and bake at 150o Celsius for 45 mins. At the halfway point, mix it and spread it out again.

Double Coconut Granola

Take 4 cups of oats and to it add 1 cup sliced almond, 1 teaspoon cinnamon, ¾ teaspoon salt, ½ teaspoon salt and ½ teaspoon ground ginger. Pour in ½ cup coconut oil, 1 teaspoon vanilla extract and ½ cup maple syrup. Spread the mixture on a pan and bake at 175o Celsius for 15 minutes. Add 2 cups of grated coconut, mix, spread it out again and finish off by baking for another 5 minutes.

You can store your granola for up to 2 weeks in an airtight container. Feel free to modify the recipes by substituting nuts and dry fruits of your choice. You can also use honey instead of maple syrup, but be careful while baking as honey tends to brown quickly.
